SOLD OUT Colour: Bright cherry red, shiny and clear. Bouquet: The aromas are varietally correct, cherry and raspberry fruit mixed with a touch of Chinese five spice. The perfume is fresh and intriguing with a hint of vanilla to finish. Palate: The structure of this wine is tight and nervy. The acid carries the juicy vibrant red fruits creating an impression of elegance and complexity. The wine at this stage is very young and just needs another12 months before it really starts to communicate. This wine is our finest so far, an absolute blinder. Winemaker’s comments: This wine has been made in the traditional Burgundy way. The 1989 Forest Hut vineyard cropped at 1 tonne per acre. The grapes were hand-picked then crushed and destemmed over 5% whole bunches. A cold soak was carried out for four days before the alcoholic fermentation started. Two weeks later the ferment was basket pressed then pumped straight to French oak barriques where it rested for 16 months. I am extremely excited about this wine, it has both grace and charm and is a brilliant marriage with mushroom risotto or Chinese duck. Cellaring Potential: 4 – 6 years |
